Tunisian Ceratonia siliqua: Phytochemical Analysis, Antioxidant Activity, Preparation and Characterization of Carob Emulsion System

Ceratonia siliqua were screened for their polyphenol content and antioxidant ability. A formulation of emulsion using the seed oil galactomannans was assessed. Results showed that maceration contained greatest amount phenolics in organs. The best capacity found seeds extract soxhlet method. chromatographic analysis carob organs predominance gallic acid fruits pods.Fatty composition dominated by palmitic, oleic linoleic acids with 16.04, 38.08 38.85%, respectively. Finally, characterization emulsions stabilized galactomannan from proves this biopolymer is an excellent food emulsifier. In fact, production having average diameter dispersed droplets a few micrometers creaming index greater than 80% reflects very high stability. Overall, results obtained indicated C. can be valued as emulsifier several foods, pharmaceutical cosmetic industries.
